Bread Croutons with Bitter Chicory, Provolone Cheese and Anchovies

Rolled Anchovy Fillets with Pantelleria Capers in Olive Oil 46g

INGREDIENTS FOR 4 PEOPLE

8 Delicius anchovy fillets with Pantelleria capers in olive oil
8 slices of brown or cereal bread
500g of bitter chicory
1 garlic clove
160g of provolone cheese
Extra virgin olive oil
Salt
Ground pepper at the moment

PREPARATION

Wash the bitter chicory and cut in small pieces, then boil it for 10 minutes in salted water. Drain it very well once cooked.
Sauté the cooked bitter chicory in a pan with 2 tablespoons of oil, half a garlic clove, salt and pepper.
Lightly toast the bread slices. If you want it to have a stronger taste, delicately pass the remaining piece of garlic on the upper side.
Add to each bread slice some of the bitter chicory, then a thin slice of provolone cheese. Pass the croutons in the heated oven grill for a couple minutes, until the cheese begins to melt. Then serve by adding a rolled anchovy fillet with caper on top. Serve hot.
