anchovies. Only Engraulis Encrasicolus, the best anchovies, become Delicius  anchovies. Nowadays, as back in the past, they are fished when the nights are deep dark (moonless) starting from March through September using a traditional fishing boat fitted with a “Lampara net”, thus respecting the sea and the sea bed.

 

mackerels. Scomber japonicus, the most delectable species, has been selected for our Delicius  range of  mackerels.  It belongs to the family of the bluefish and it is quite popular in the Atlantic Ocean. It is one of the mostly appreciated fish in the Mediterranean diet and it is recommended by doctors thanks to its high content in Omega-3 fats.

sardines. Our pilchards belong to the species Sardina pillchardus and they are members of the family of fish commonly called bluefish. Thanks to their high content in Omega-3 fats, they are widely recommended by nutritionists for a healthy and balanced diet. In the traditional version fish bones are not removed from the pilchards as they become extremely soft after cooking and are an irreplaceable ally in the treatment and prevention of osteoporosis.

 

shrimps. Only delectable Pandalus borealis becomes a Delicius shrimp.  These shrimps live down deep the ice-cold waters of the Northern Seas. They are given different names according to their place of origin: pink shrimps, deep sea shrimps, boreal shrimps, but for us they are simply Delicius shrimps.

 

clams. Delicius clams belong to the Venus galina species: this is why they are the most delectable ones.  Fished in Italian seas, this typically Mediterranean species is the most appreciated for the preparation of sauces and risottos with a delicate scent of sea.

 

olive oil. In order to be defined as organic, an extra virgin olive oil must follow precise regulations and parameters that interest all the phases of production: from the cultivation, the harvest, the pressing and the preservation. The cultivation is natural, with no use of chemical fertilisers and pesticides.  At the olive oil mill, the organic olives follow a separate pressing procedure. The final phases of packing are also regulated by strict norms to follow. The labelling is also certified by a special authorisation that guarantees the quality of the product.  

 

Olio extravergine d’oliva bio. spicy sauce. Take a dozen of ingredients and a recipe which seems to come out of a fairytale book and you will obtain the famous Spicy Sauce from Delicius. Its recipe has been kept under wraps  since the moment of its very formulation and has always been the same for more than 100 years! Open that famous orange can and let the irresistible flavour of the spicy sauce overwhelm you.

 

cloves. A clove put in each jar is the secret to make our anchovies so special. The clove species we use is Eugenia caryophyllata as this has very strong anti-oxidation properties. Most of all, we have selected it for its intense, sweet and flower-smelling scent with a little taste of pepper, which makes our anchovies unique.

 

capers. Capers have been cultivated ever since ancient times all over the Mediterranean basin. We use the bud of the plant, the caper, which is a traditional ingredient in different dishes of the Sicilian cooking tradition. Our capers belong to the Capparis spinosa species and the active ingredients in them have diuretic and blood vessel protective properties.  We have selected this species for its intense and aromatic taste, which makes the combination with our anchovies unique.

 

 

red hot chili peppers. This small fruit originally grown in the Americas has different properties: it has antibacterial effect, it is a strong antioxidant agent and it is rich in vitamin C. We have selected it for its peculiar itchy effect, which is “spicy hot” and picks at the mouth and at the other senses as well.
