Croutons with Turnip greens, Delicius Anchovies, Pecorino Cheese and Oven Baked Tomatoes

2 thick slices of durum wheat bread
8 plum tomatoes
2 shallots
3 unshelled walnuts
150g of Turnip greens
40g of Pecorino Romano cheese
2 tablespoons of milk
4 Delicius Double anchovies in olive oil
1 garlic clove
Extra Virgin olive oil
White wine vinegar
Chilli Pepper


Cut the tomatoes in half, oil them, salt them and cook them in the oven for 15 minutes at 190 degrees, then boil the turnip greens for 3-4 minutes in salted water, then sauté them in a pan with oil, garlic and chilli pepper. In the meantime heat the milk in a pan, then remove it from the heat and add the grated Pecorino cheese, mix thoroughly until it melts.
Cut the shallots in quarters and boil them for two minutes in a mix made of half water and half vinegar.
Finally butter the bread slices and toast them in the oven until golden and crisp, serve with a base of turnip greens followed by the Pecorino cheese cream, then add 2 Delicius anchovies on top and complete with the other ingredients: the tomatoes and the walnuts.
