Small Tatin with Onion and Anchovies

Open our signature tin box of Delicius anchovies availables in 3 different flavors. Only the highest quality fish is selected, then skilfully salted and let to rest for months and months in wooden barrels, until it is perfect. It is then transformed into our fleshy fillets with a soft and determined taste. All the experience and the wise practice of entire generations has been translated in such a simple yet tasty food. 1 tin of anchovy fillets in spicy sauce
1 tin of anchovy fillets in olive oil
1 tin of anchovy fillets with capers
1 package of puff pastry
4 small white onions
White wine vinegar
1 tablespoon of sugar
Extra virgin olive oil


Make 12 or more round discs from the puff pastry, each about 6 cm in diameter. Cut the onions in thick rings. Sauté the onion in a pan with 2 tablespoons of oil, turn them carefully when golden, making sure they don’t loose their round shape, add salt, sprinkle with a few drops of vinegar and sugar, cook for another 2 minutes. When the onion is ready, place a ring on top of each puff pastry disc. Bake in the oven at 200 degrees for about 12 minutes. Serve with an assortment of anchovies on top. A perfect appetiser!
