From Monday 19th to Wednesday 21st February at 12pm onwards at the Gulfood fair in Dubai, you will find a free tasting and show cooking dedicated to three specialties from Parma: Pamigiano Reggiano, Anchovies and Olive Oil.
ParmaAlimentare, in collaboration with three main producers – Delicius, Coppini Arte Olearia and Parma2064 – will start a series of culinary show cookings and tastings, both inside and outside the fair thanks to Barilla Restaurant, to represent the Made in Parma taste and traditions. A perfect opportunity to let the new Asian markets discover the history, the productive culture and the processes that lie behind the culinary excellence of the territory.
Delicius will make you immerse in the world of fish preserves: a tradition that dates back to the Greek and Roman times, evolved over centuries until today. Initially used as a simple sauce, then as a preservation technique and now as the preparation of refined dishes; slow manual processing such as filleting (which involves washing and removing bones and external skin), long resting times and expert processing and storing of anchovies in glass jars, tins or plastic trays. A product that maintains its precious value over time!
