PACCHERI PASTA “ALLA PUTTANESCA” WITH GRILLED MACKEREL FILLETS

  • In a frying pan, sauté a couple garlic cloves and olive oil.
  • When the garlic is golden, add the tomato puree, the chili pepper, capers and olives, then adjust with salt and simmer for about 15 minutes.
  • Chop the parsley and set aside.
  • Cook the paccheri in boiling salted water.
  • In a bowl, flake the mackerel fillets, then add them to the sauce and cook for another 5 minutes.
  • Drain the paccheri in the sauce, then add the fresh parsley.
  • Serve with a whole mackerel fillet and a few parsley leaves as garnish.
