Orecchiette with Burrata, Delicius anchovies “Insalate” and Taralli

Insalate, 9cm anchovies, with low oil content (75% less than the traditional glass jar). Less waste, best practicality and a maximum of usability of the fillets. 9cm is the perfect size to reinvent the fresh vegetables, cereals, rice or pasta salads!


Orecchiette pasta, 200 g
Burrata, 100-120 g
Delicius anchovies “9, Insalate”, 2
Lemon zest
Black pepper
Taralli, 20 g
Extra virgin olive oil


Cook the orecchiette in abundant salted water. In the meantime, mix the burrata with the lemon zest, the Delicius anchovies “9, Insalate”, the mint leaves and the black pepper. Drain the pasta directly into the mixture and mix it. Stir in the extra virgin olive oil. Once served, crumble the taralli over the orecchiette and complete with a little lemon zest and a mint leaf.
