Cold pasta with spicy mackerel, eggplant, arugula, and mint

INGREDIENTS

Pipette pasta, 100 g;

Delicius Spicy Classic Mackerel, 125 g;

Eggplant, 1;

Mint, to taste;

Arugula, to taste;

Lemon (zest), to taste;

Chili threads, to taste;

Oil, to taste;

Salt, to taste;

Pepper, to taste.


Tips:

  • You can use your preferred pasta shape.
  • You can enhance the flavor by briefly sautéing a clove of garlic and chili in the oil before adding the eggplant.

PREPARATION

Cook the pasta in salted boiling water, then drain al dente and rinse under cold water to stop the cooking.

Transfer to a large bowl, drizzle with a bit of oil, and set aside.

Dice the eggplant into approximately 1 cm cubes and sauté in a pan for about 15 minutes with a drizzle of oil and a pinch of salt.

Once cooked, add the eggplant to the pasta. Also, add a handful of arugula, some chopped mint leaves, lemon zest, and the spicy mackerel. Mix well to combine all the ingredients.

Plate and garnish with chili threads and lemon zest.
