For the sweet-and-sour onions:

  • Red onion, 1;
  • Red wine vinegar, 25 ml;
  • Water, 75 ml;
  • Brown sugar, 1 tbsp;
  • Extra virgin olive oil;
  • Salt.


For the sweet-and-sour onions:
  • In a bowl, mix the brown sugar with water and vinegar to make a smooth mixture.
  • Cut the onions finely, then sauté in a pan with a drizzle of extra virgin olive oil.
  • Add the mixture of vinegar, sugar, salt and water.
  • Let the liquid absorb completely and remove the caramelised onions.

For the fruit salad:

  • Boil the potatoes in salted water.
  • Open the cherries in half and remove the stone.
  • When the potatoes are ready, cut them in small slices and arrange them on the base of the dish.
  • Add the cherries and season with a drizzle of oil and a sprinkle of pepper.
  • Finish the dish with pieces of the eggplant in oil, the caramelised and the Mackerel Fillets.
