Mackerel and egg sandwich
For 4 people, preparation time: 20 minutes
8 slices of whole grains bread
2 spoons of milk
50 g of fresh cheese
2 pack of Delicius mackerel fillets in olive oil
4 Tropea onions
2 spoons of vinegar
extra virgin olive oil
Cut the Tropea onions in thin slices, add salt and vinegar, mix and let it rest for 15 minutes.
Cook it in a pan with two spoons of extra virgin olive oil. Add some water than cook it for 10 minutes and let it rest. Mix the eggs, the milk, salt, pepper and one spoon of chopped dill.
Scramble the eggs in a nonstick pan with two spoons of extra virgin olive oil. Spread the fresh cheese on the bread, add the cooked eggs, add the Delicius mackerel fillets in olive oil on top and complete with the red onion. Close with another slice of bread and cut in half.
