Mackerel and Potato Fish Cake

INGREDIENTs for 6 PEople

250-300 g of Delicius Grilled Mackerel Fillets
600 g of potatoes
200 g of borettan small onions
Salt and Pepper
1 pepper in vinegar
Sugar
Extra virgin olive oil
Vinegar
Herbs: Thyme or marjoram or oregano

PReparation

Boil the potatoes; in the meantime drain the Grilled Mackerel fillet from their liquid, then pass them in a mixer to obtain a compact cream. Crush the potatoes and mix them with the mackerel mixture, then season them with oil and salt to adjust the flavour. Add your choice of dry herb (we used oregano in this recipe). Oil a fish-shaped mold, fill it up with the prepared mixture, then place it to rest in the fridge. In a small bowl put together oil, vinegar, salt and sugar. Cut the small borettane onions in halves and place them on a baking tray with the cut side facing up; sprinkle the onions with the prepared oily emulsion, then bake at 180 degrees for about 20 minutes. Serve the fish cake on a plate, removing it from the mold, and decorate with the sweet and sour onions.
