Small Eggplant Pie with Delicius Double anchovies

Filetti di Alici in Olio di Oliva Arrotolati DOUBLE 90g.

Rolled Anchovy Fillets in Olive Oil DOUBLE 90g. Take two Delicius anchovy fillets, the ones that are really the best. Roll them up together and you will discover DOUBLE, the new anchovy twice the size, and twice the taste.In the classic glass jar they really seem huge, and they are. Hugely marvelous.

Filetti di Alici in Olio di Oliva Arrotolati 90g Double | Delicius

INGREDIENTs for 2 people

1 pack of Delicius Double anchovies in olive oil 
2 Eggplants
½ kg of Potatoes
100 g of Mozzarella cheese
50 g of Tomato sauce


Cut the eggplants lengthwise in long slices of about ½ cm thick, cook them in the oven on a baking tray with a clove of garlic and olive oil for 10 minutes at 180°. 
Finely chop the Delicius Double anchovy fillets, then add them to the potatoes (previously boiled and crushed with a fork) and parsley. Cut the mozzarella into small cubes.
Oil a round aluminum mold (for small pies) and cover it with breadcrumbs, then arrange the slices of aubergine on the sides. Fill half the mold with the potato mixture, then insert some of the small mozzarella pieces in the middle, then fill with the rest of the potatoes up until the edge; close the mold with the aubergines, cover with breadcrumbs and bake at 180° for 10-15 minutes.
Meanwhile prepare a simple tomato sauce to be placed as a base of the dish.
Serve the pie hot with a decoration of sauce on the side.
