Fregola Pasta with Mackerel Fillets in Vinegar and Cannellini Beans

1 box of Delicius grilled mackerel fillets
6 slices of sweet bacon
150g of pre-cooked cannellini beans
50g of parmesan cheese
200g of fregola pasta
half an onion


Boil half a litre of water with salt. Drain the mackerel fillets from their box and marinate them in a bowl with white wine vinegar and thinly cut parsley.
Sauté half an onion with the sweet bacon (both previously thinly cut), then add the fregola pasta and toast it in the pan for a couple of minutes.
Use the salted hot water to add liquid to the preparation when it is drying up. Cook this way for about 12 minutes.
Halfway through cooking add the cannellini beans (previously drained from their liquid);
Cream up the fregola pasta with oil and parmesan cheese.
Serve by placing some fregola on the bottom pf the plate and then adding a couple pieces of marinated mackerel fillets on top.
Complete with a sprinkle of fresh parsley on top and pepper.
