\/>\nDifficulty: Medium<\/p>\n<h2>INGREDIENTS<\/h2>\n<p>For the Gnocco Fritto:<\/p>\n<ul>\n<li>Type 0 flour, 500 g;<\/li>\n<li>Water, 200 g;<\/li>\n<li>Fresh brewer&#8217;s yeast, 8 g;<\/li>\n<li>Lard, 70 g;<\/li>\n<li>Sugar, 1 tsp;<\/li>\n<li>Salt, 12 g;<\/li>\n<li>Oil for frying.<\/li>\n<\/ul>\n<p>For the arugula pesto:<\/p>\n<ul>\n<li>Arugula, 80 g;<\/li>\n<li>Grated Grana Padano DOP cheese, 20 g;<\/li>\n<li>Pine nuts, 20 g;<\/li>\n<li>Extra-virgin olive oil;<\/li>\n<li>Water;<\/li>\n<li>Salt.<\/li>\n<\/ul>\n<p>For the topping:<\/p>\n<ul>\n<li>Squacquerone cheese, 280 g;<\/li>\n<li><a href=\"https:\/\/www.delicius.it\/prodotti\/alici-in-olio-aromatizzato-al-tartufo-bianco\/\">Anchovy fillets in white truffle-flavored oil.<\/a><\/li>\n<\/ul>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/t3vJRA7OZPk?\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><span data-mce-type=\"bookmark\" style=\"display: inline-block; width: 0px; overflow: hidden; line-height: 0;\" class=\"mce_SELRES_start\">\ufeff<\/span><span data-mce-type=\"bookmark\" style=\"display: inline-block; width: 0px; overflow: hidden; line-height: 0;\" class=\"mce_SELRES_start\">\ufeff<\/span><\/iframe><\/p>\n<h2>preparation<\/h2>\n<ul>\n<li>Take 60 g of flour and 60 g of water aside.<\/li>\n<li>Steep the fresh yeast in this amount of water, then add the sugar and flour.<\/li>\n<li>Mix well, place in a container, cover with kitchen wrap and let rise in a warm place (around 25\u00b0) until the dough has doubled in volume (this will take about 1 hour).<\/li>\n<li>Once the dough has doubled in volume, incorporate the remaining flour and water, a little at a time.<\/li>\n<li>Then add the salt and continue kneading.<\/li>\n<li>Add the lard, one flake at a time, and knead until smooth.<\/li>\n<li>Place in bowl that has been lightly greased with lard, cover with kitchen wrap and let rise again in a warm place (around 25\u00b0) for about 2 hours.<\/li>\n<li>After the resting time has elapsed, roll out the dough with a rolling pin to a thickness of about 3 mm and cut into rectangles.<\/li>\n<li>Heat the frying oil to 170\u00b0C, then fry a few pieces at a time, turning them over after about a minute so that they turn golden brown on all sides.<\/li>\n<li>For the arugula pesto, blend all the ingredients in a food mixer until smooth and homogeneous.<\/li>\n<li>Serve the Gnocco Fritto with a topping of squacquerone cheese, arugula pesto, and Anchovies in white
