{"id":17631,"date":"2022-04-14T07:37:45","date_gmt":"2022-04-14T07:37:45","guid":{"rendered":"https:\/\/www.delicius.it\/2022\/04\/20\/guinea-fowl-with-anchovy-flavoured-butter\/"},"modified":"2022-04-20T07:38:35","modified_gmt":"2022-04-20T07:38:35","slug":"guinea-fowl-with-anchovy-flavoured-butter","status":"publish","type":"post","link":"https:\/\/www.delicius.it\/en\/2022\/04\/14\/guinea-fowl-with-anchovy-flavoured-butter\/","title":{"rendered":"Guinea fowl with anchovy-flavoured butter"},"content":{"rendered":"<p>Ingredients for 2 people<br \/>\nPreparation time: 20 minutes<br \/>\nDifficulty: Easy<\/p>\n<h2>INGREDIENTS<\/h2>\n<ul>\n<li>Guinea fowl breast, 1;<\/li>\n<li>Artichokes, 4;<\/li>\n<li>Garlic, 2 cloves;<\/li>\n<li>White wine, 1 glass;<\/li>\n<li>Fresh mint, couple leaves;<\/li>\n<li>Parsley, to taste;<\/li>\n<li>Delicius anchovies from the Cantabrian Sea, 6 fillets;<\/li>\n<li>Butter, 100 g;<\/li>\n<li>Oil;<\/li>\n<li>Salt;<\/li>\n<li>Pepper.<\/li>\n<\/ul>\n<p><iframe loading=\"lazy\" title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/uy_RD3GdIwo\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<h2>PREPARATION<\/h2>\n<ul>\n<li>Clean the artichokes from the tough outer leaves and the inner beard and cut them very finely.<\/li>\n<li>In a pan, possibly non-stick, saut\u00e9 two garlic cloves with a little oil.<\/li>\n<li>Then add the artichokes and cook for a few minutes.<\/li>\n<li>Remove the garlic and blend with white wine and continue cooking for 7-8 minutes. At the end of cooking, add a few leaves of mint.<\/li>\n<li>In the meantime, prepare the flavored butter by chopping the parsley very finely. Cut 4 anchovy fillets from the Cantabrian Sea and add them to the parsley.<\/li>\n<li>In a bowl, mix the butter with the parsley and anchovies.<\/li>\n<li>Transfer the flavored butter to a sheet of baking paper and roll it up inside the paper to form a cylinder.<\/li>\n<li>Let it rest in the refrigerator until ready to use.<\/li>\n<li>Proceed with cooking the guinea fowl breast by first cutting into the skin with two cuts, then season it with salt and pepper.<\/li>\n<li>Add a knob of flavored butter to the pan.<\/li>\n<li>Place the meat in the pan and soak continuously with the butter while cooking.<\/li>\n<li>Cook for about ten minutes until the outside is nicely glazed.<\/li>\n<li>Serve by placing the artichokes on the base of the plate and the guinea fowl breast on top.<\/li>\n<li>Garnish with a disc of flavoured butter and a rolled anchovy fillet, then serve.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>A dish that puts together the delicate taste of the guinea fowl with the decisive twist of the special anchovy fillets from the Cantabrian Sea.
