A Roman classic with a fresh and nutritious twist

Puntarelle are a much-loved ingredient of Roman tradition, known for their crunchiness and slightly bitter taste. In this revisited version, the salad is enriched with Delicius Sardines, capers and Lemon Snacks for a surprising mix of savouriness, freshness and Mediterranean flavour.

Why it’s good for you

The Sardines, a natural source of omega-3, calcium and vitamin D, are combined with puntarelle, rich in fibre and antioxidants, in a dish that combines taste and everyday wellbeing.

Because a long life also starts with what we choose to put on our plate.

Method

  1. Cut the puntarelle into julienne strips, remove the tougher part and soak them in ice water for about 2 hours, so they curl up and become crispier.

  2. Meanwhile, thinly slice the Lemon Snacks, removing the seeds.

  3. Prepare the vinaigrette by mixing the capers with 2 tablespoons of their vinegar, 4 tablespoons of extra virgin olive oil and a grind of pepper. For a more intense flavour, you can also add anchovy paste.

  4. Drain the puntarelle well and dress them with the vinaigrette, the lemon slices and finally the whole sardines.

  5. Serve immediately, with a drizzle of oil if desired.
