Simple, quick, balanced: this mackerel and pink grapefruit salad is the perfect dish for a light and nutritious lunch, even when out and about. A handy recipe combining oily fish, fresh fruit and functional ingredients to support the body’s balance, in line with the principles of the Mediterranean diet and the Longevity Nutrition Program.

The star ingredient, Delicius Mackerel in olive oil, is rich in omega-3, vitamin D and high-quality proteins. Pink grapefruit adds a citrus note and a burst of antioxidants, while raspberries – reduced to a sauce – turn the dressing into a healthy everyday ritual, thanks to the natural presence of polyphenols.

Method

  1. Wash and dry the salad hearts, then transfer them to a large bowl.

  2. Supreme the pink grapefruit, also removing the white pith, and add it in wedges.

  3. Add the well-drained mackerel fillets, breaking them up gently.

  4. In a separate small bowl, mash the raspberries with a fork, add the apple cider vinegar, water, salt, pepper and a drizzle of extra virgin olive oil. Stir until a smooth, fragrant pink sauce is obtained.

  5. Pour the dressing over the salad, complete with fresh dill leaves and serve immediately.
