Crostoni with Boiled Eggs and Mackerel with Sautéed Mushrooms

Method

  1. Toast the wholemeal bread.

  2. Cook the eggs in boiling salted water for 5 minutes and 40 seconds, drain them and plunge them into cold water. Peel them once they are cold.

  3. Heat a non-stick pan with 2-3 tablespoons of oil, add the crushed garlic, 2 sprigs of thyme and the sliced mushrooms.

  4. Cook them over high heat, salt and turn the slices to brown on both sides.

  5. Pepper the mushrooms generously, then spread them over the bread slices.

  6. Place the drained mackerel fillets and the hard-boiled eggs cut in half on top.

  7. Garnish with the sprouts and a drizzle of oil.
